The Salt Room hasn't been open that long - the now staple eatery opened on Brightons sea front in February 2015, by the same team behind Brightons award-winning The Coal Shed Restaurant.
A modern mash-up of British seafood and grills, their main focus is fish - and boy, do they know how to cook it. What makes The Salt Room even more unique though is their emphasis on sustainability, championing local produce and the ethos of sharing plates.
If you want a sea view restuarant, you can't get much closer - in the Summer a huge outdoor terrace makes it the perfect place for a long, lazy lunch people watching and enjoying drinks. Meanwhile, the restaurant inside seats 84 in the dining room, 16 at the bar, and there's also a private dining room, which can be reserved for parties up to 12.
Start out with a cocktail (the knowledgeable staff will recommend one to you!) before geting down to business - the food. We started out with the seared tuna, tatare, watermelon, pickled radish, before enjoying the INSANELY good stone bass, served with Iberico ham, artichoke, cockles and Spanish rice, but even if you don't like fish, there are options for everyone.
And the final piece of the dining puzzle was dessert - and we promise you, you have to try what we had! Their signature dessert is the 'Taste Of The Pier', a wooden board which serves up all the seaside swet treats you could wish fo, including mint choc chip 99, raspberry marshmallows, candy floss doughnuts, pebbles and fudge. YUM.
Round off the night with a cocktail or nightcap before either hitting the town, or heading back to your hotel for a cosy night in. We stayed in the lovely and welcoming Hotel Una, a boutique hotel with unique rooms and great service.
